Nana’s Peanut Butter Cookies

This recipe is dedicated to Nana and Brittany. I never had the honor of meeting Nana and eating her own cookies yet this recipe is a good way to channel the fiery spirit that was Nana Green. You clicked on this recipe because you wanted a peanut butter cookie and dammit that is what you’re going to get. This is the no bullshit recipe of the baking world just like how you wouldn’t get any bullshit with Nana. Now listen closely because Nana definitely didn’t repeat herself:

Ingredients: 

  • 1 cup of your favorite peanut butter 
  • 1 cup of sugar 
  • 1 large egg 
  • Vanilla extract (optional) 

Kitchen tools: 

  • Oven 
  • Mixing bowl 
  • Spatula or wooden spoon 
  • Measuring cup 
  • Fork 
  • Baking pan

Step 1: 

Preheat the oven to 350. While that is preheating combine peanut butter, sugar, egg and vanilla extract if you choose into the mixing bowl and fold into itself until evenly combined. 

Step 2: 

Grab pinches of the dough and roll into about an inch thick ball. Place the dough balls evenly spaced out onto the baking pan. I like to leave at least an inch and a half between cookies on the pan to ensure they do not touch when they puff up/expand. 

Step 3: 

Grab a cup of cold water and the fork and stamp the cookies down to get that signature criss cross look. Place the baking pan into the oven and bake for 10-12 minutes or until desired doneness. When the cookies come out of the oven they will be airy and puffy. Allow them to cool and set on the pan for about 8-10 minutes. 

Tips, tricks, and preferences: 

  • I have discovered that Peter Pan Honey Roasted Creamy Peanut Butter adds a unique richness compared to the ordinary Peanut Butter jar. 
  • These cookies can be overcooked easily, if you find yourself needing to add more time depending on your oven, start off with 2 to 3 minutes at a time once you reach the initial ten minute mark that way they do not burn. 
  • Sometimes the cookie dough can be too sticky or simply forming more of a grainy mushy pile than a dough, this is a good indication that it may be too warm, pop it in the freezer and allow it to cool and set a little more into the form of dough.
